"Scrambled-Quiche" - the rather elegant version of Scrambled eggs. A real simple solution if you have only basics at home but - as I do sometimes - don't want to leave the house.

For the dough/pastry:

  • 160g Flour
  • 100g Butter
  • 3 Spoons Water

TIP: Use Muffin Trays to make the Scrambled Quiche look nicer.

For the Filling:

That's the fun part - Anything really

Today I used:

  • Green Beans
  • Peas
  • Corn
  • Bacon

Anything you find in your fridge and you feel works well together - great for leftover and unused vegetables etc.

Top with scrambled egg mixture and off into the oven.

Bake for about 20 - 30 min. Just make sure the top is nicely golden brown and your Scrambled Quiche is ready to be served.

Today I added a bit of salad Italian dressing and a bit of Vinegar Creme which was absolutely delicious!

Great to eat cold next day and fab to take to the office or a weekend trip! My Scrambled Quiche will be eaten this weekend at a trip to Ballyhass Adventure Lakes, it's time for some wake boarding with the girls :)!
